Meatless Monday: Orange-Balsamic Roasted Beets and Carrots over Quinoa and Spinach

The storm's-a-comin' as I write this: the winds outside are picking up and the rain is just starting to come down. We are all ready with a stocked kitchen, extra filtered water, and plenty of candles at hand. We don't know just how bad Sandy's going to be, but we will be cozy :)

I was craving fresh vegetables after 3 days in a row of eating a less than stellar intake. Turkey loaf with Rice-a-Roni one night, carnival fare at the pumpkin patch for lunch on Saturday, then lasagna with tiramisu for dessert- I needed vegetarian pronto! And beets were on my mind...I picked up a bunch at my last trip to the supermarket, and roasted them along with some carrots in a sweet and slightly sour marinade...



Orange-Balsamic Roasted Beets and Carrots
(serves 2-4)

Ingredients:

3-4 beets
4-6 carrots
1/4 cup balsamic vinegar
1/4 cup orange juice
1 tsp orange zest + extra
Salt and pepper to taste (optional)

Set oven to broil. Slice off tops and bottoms of beets, then peel with a peeler. Wrap in tin foil, and place on baking sheet, then into oven like in picture below. Broil for 45 minutes-1 hour, or until they are easily pierce-able by a fork.



Meanwhile, trim and peel carrots then cut into thirds and quarters, or however you'd like. Reserve them for the last 20 minutes of roasting; at the appropriate time, arrange them on tray beside beets.

Once ready, remove beets and carrots from oven and allow to cool. While they're cooling, heat balsamic vinegar and orange juice over low heat in small saucepan. Heat for about 5 minutes, or until the mixture thickens slightly. Slice beets up like an orange into sections, or however you prefer. Toss veggies in bowl and some salt and pepper to taste if desired.

We ate this served over quinoa and fresh baby spinach, along with some orange slices and extra orange juice squirted right onto it all. It was delicious and refreshing, just what I was craving. Paul and Lily enjoyed it as well. This is a great way to introduce these kinds of healthy foods to your family. The veggies are extra sweet with this marinade, and it all mixes well with the spinach and quinoa. I cooked 1 cup of quinoa according to the package, along with a tsp of olive oil.

Balsamic vinegar is my most often-used salad dressing. I like to mix it with a little olive oil, and salt and pepper. Did you know this low-fat, low-cal condiment also contains some health benefits? It is high in antioxidants, aids the digestive system in breaking down proteins, and also helps to regulate blood sugar, making it especially beneficial for those with diabetes.

If you have little ones under a year old, serve some of the carrots and beets mashed up plain, or with a little orange juice if desired. This is truly a meal the entire family can enjoy, whether you partake in Meatless Mondays or not.

Meatless Monday: Apple Pancakes

Recently I came cross this clever idea involving pancake batter and sliced apples on Pinterest...read on...


Apple Pancakes
(makes about 12 pancakes)

2 apples of your choice
1 1/2 cups whole wheat flour
3 1/2 tsp salt
1/4 tsp all spice
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tbsp honey
1 1/4 cup milk of your choice
1 egg
2 tbsp butter or oil (I used coconut oil)

Mix all dry ingredients together in one bowl, then all wet (except for oil or butter) in another; combine until batter is smooth. Core apples, and then slice width-wise at about 1/4" thick, or desired thickness. Heat oil or butter over medium-low heat in large frying pan (or use a griddle if you got one!). Dip each apple slice into batter with a toothpick, then place onto pan. Fry for about 2-3 minutes on each side. Serve topped with extra apple slices and maple syrup. Super easy and super yummy! Lily and I loved them, and I'm sure your family will too :) Such a clever and simple way to make a fun, fall-themed breakfast anytime of the year. We used ginger gold the first time, and then honey crisp the second time and both ways were very good, although I prefer the sweetness of the honey crisps over the spicy ginger golds.

Meatless Monday: Pan-seared Asparagus

Today I'm keeping it simple with this easy, yet dinner crowd-pleasing, side dish. Sometimes you just want something that tastes gourmet, even though it only took you a few minutes to prepare it. Search no further- this is it, and it can be done with other vegetables too.


Pan-seared Asparagus
(serves 6-8)

1 lb asparagus, trimmed and rinsed
1 tsp coarse salt
1 tsp coarse black pepper
1 tsp thyme
1 tbsp lemon juice
2 tbsp olive oil

Heat the olive oil in a large skillet over medium-low heat. Once heated sprinkle some of the salt and pepper over the oil, then place the asparagus spears on top. Sprinkle with the rest of the salt and pepper and thyme, then cover, cooking for about 5 minutes. Uncover and stir the spears around, allowing to cook on each side for a period of time until slightly blackened. During the last minute of cooking, toss the lemon juice in and stir the spears around once more. The object is to cook them well enough so that they are crisp, yet soft in the middle. Serve hot with extra seasoning if desired, with some rice and eggplant or other main course. Although this is Meatless Monday, I must add that this side dish goes excellent alongside steak.


Thyme is quite lovely with asparagus, and even better with the added lemon juice. It really brings out its flavor while subduing some of its sharpness. Thyme is full of vitamin K, antioxidants, and iron, as well as antimicrobials that have been used for years to help preserve foods. Fir this dish, you can use it fresh or dried, it will taste good either way. Although, its beneficial properties will be more preserved if used fresh.

Over the weekend we attended a young relative's birthday party, and I was pleased to see Lily pass over her pizza for raw veggies and ranch dip. This was especially good for her since- as you may have read in a previous post -she's been fighting a nasty cold for the past nearly week and a half. We even considered not taking her to the party, but she was having fun with the rest of the group bouncing around at Bounce U! All that's left of the cold now is a cough.

Affirming the values of healthy eating habits for children is a lesson that can last far into adulthood. It is so important for kids to eat healthy and balanced, and including fresh fruits and vegetables in the daily diet is a must. Variety is best, but sometimes there will be types of veggies that they just don't like, or won't even try, such as brussel sprouts. I believe it's important to never give up, and just keep trying new ways to serve it, and even when that doesn't seem to be working, give it a break then try again some other time. Taste buds grow and develop along with your child, and one day they may hate broccoli, then the next thing you know they're asking for seconds!

Sweet Saturday #20: Raw Chocolate Banana Tart

For today's post, I'm sharing a really yummy recipe adapted from Good Girl Gone Green's blog. She always has such delicious recipes made with mostly (if not all) raw ingredients. You should definitely go check her out!

Anyway, when she linked this recipe up to Sweet Saturday last weekend, I just had to try it. I had most of the ingredients already, and what I didn't have, I improvised. I also had 2 ripe bananas needing to be used, so I tossed those in too. It came out phenomenal! The only thing I would do in the future is add some honey into the crust because I found it a little bland, but that's just me :) Other friends who tried it said they liked it just the way it was (yes, was, because this baby is gone!).


Raw Chocolate Banana Tart
(serves 8-12)

For crust:
1 cup nuts of your choice, such as almonds or pecans (I used a combination of almonds and cashews)
2 tbsp shelled hemp seeds
2 tbsp flax seed (I used some that were already ground)
1/2 cup coconut oil
1/3 cup shredded unsweetened coconut

For filling:
2 ripe bananas 
1/2 cup raw cacao or cocoa powder (I used cocoa)
1/4 cup honey, agave, or maple syrup 
1/4 cup coconut butter or oil (I used oil)

Note: If possible, soak nuts for up to 4 hours before using. I only soaked them for about half an hour, and everything turned out fine.  

Place nuts, coconut oil, and shredded coconut into food processor and blend until it is a fine crumble. Pour crumbs into a 8' or 10' pie pan and press into the bottom of the pan to form a layer, then place into freezer to set.

Next, melt the coconut butter or oil if it is not melted already. You can keep things raw by melting it in a food dehydrator if you have one, or placing it in a small bowl in a larger bowl of warm water. Once melted, mix the ingredients for the filling together in the food processor, except for one of the bananas, until smooth.


Take the nutty crust out of the freezer, and spoon or pour chocolate banana mixture onto it, spreading it so that about an inch of the crust is still visible. Slice the reserved banana up and place slices on top of tart. Place in freezer until it sets, for about 1 hour (could very well take less, but an hour is for sure). Allow to defrost a bit before serving.


The one thing with placing the sliced banana on top is you have to keep the tart in the freezer once it's done, as to prevent them from getting all brown and gooey. If you'd rather keep it in the fridge so it doesn't take long to defrost (and easier to slice right away!), just don't put banana on top. It will still be beautiful and delicious!

Some other things you could use as toppings are:
  • sliced strawberries
  • blueberries
  • raspberries
  • sliced or crumbled nuts
  • shredded coconut
Just to name a few!

Eating raw helps to contain all natural enzymes present in food, which would be decreased or destroyed from cooking. These enzymes help our bodies to absorb the nutrients found in foods. Cooking food can also cause harmful compounds to form- especially if you burn or overcook something -that can be cancerous.  

In this day and age, it's difficult to go completely raw, but it's good to eat as much raw foods as possible, especially fruits, vegetables, and legumes. This tart will enable you to eat healthy and raw without having to lose the enjoyment of eating! Meatless Monday: Grilled Carrots and Yukons

Summer is coming to an end, but with the weather still warm, last week Paul and I decided to get some grilling done before it's completely gone. I tried something new and grilled organic carrots and Yukon Gold potatoes with some unique marinades. Take a look...


To prepare vegetables:

Cut ends off of each carrot (I used 8) and shave. Thoroughly wash potatoes (I used 2 large ones) and cut into quarters. Peel if desired. 

Rosemary-Balsamic Marinade

2 tbsp olive oil oil
2 tbsp balsamic vinegar
1 tbsp rosemary (fresh or dried)

Mix all ingredients together in small bowl. Brush over vegetables with basting brush. Add extra rosemary if desired.

Curried-Maple Marinade

2 tbsp butter
2 tbsp curry powder
1 tbsp maple syrup

Melt butter (or you could use coconut oil instead) over low heat in small pan. Stir in curry to make it curry butter. Remove from heat and mix together with maple syrup in small bowl. Brush onto vegetables with basting brush. 

To grill:

Allow vegetables to marinate for at least one hour before grilling. Heat grill to 350 degrees, then place vegetables directly onto grill, or wrapped in tin foil if preferred. Heat carrots for 10 minutes on each side or until cooked through; heat potatoes 15-20 minutes on each side or until cooked through. Pierce with fork to test done-ness. Marinate once more halfway through cooking. Allow to cool before serving.

They were simply delicious! I loved how both of the marinades turned out, but if I had to choose, I'd have to say the carrots were best with the Rosemary-Balsamic and the potatoes were best with the Curried-Maple. Just delish! Paul, Lily, and I ate them all up! The carrots went the fastest, though...

This is an ideal way to serve veggies for the whole family. Each marinade is sweet and slightly spicy without going overboard, and with low calories and only natural, healthy sugars. I hope you enjoy! Serve babies over 6 months fresh veggies grilled without marinade and mashed with a fork. My niece loves them that way!

It's Meatless Monday, but I'm taking a break...

Hello, everyone. I hope you all had a lovely weekend. I had quite a full one, and didn't have time to prepare anything for today's post. SO, I am being forced to share some of the goodies that were linked up here last weekend...oh, fooey... ;)


This delectable Pretzel Toffee from Couponing & Cooking caught my eye immediately! It's also very easy to make, so easy in fact I am definitely going to have to try and make it myself ASAP!


New party-er Earthgiven linked up this amazing Spinach, Rice and Cashew Salad. Not only is it super yummy and super healthy, it is also gluten, sugar, and wheat -free. Plus, easy to make- gotta love that!


This is not the first time I'm featuring Mary's Kitchen here. She always posts such simply delicious and healthy recipes, and these cute little Guacamole Cucumber Bites are no exception.

Meatless Monday: PB&J Sushi

On my Pinterest I have a board that is called "need to try". That is where I found today's Meatless Monday recipe. It's super easy and super cute. Mine may not have come out as cute as they did in the original picture I saw that caught my eye, but they were fun to make and tasty! Your kids will love these...


PB&J Sushi

You will need:

Peanut butter
Jelly flavor of your choice
1-2 slices of bread
Rolling pin

Carefully slice crusts off bread. Flatten bread with a rolling pin. Cut the flattened slice down the middle so it's in 2 halves. Spread peanut butter and jelly onto slice(s) of bread. Gently roll up pb&j bread strips into a tight roll so that it resembles a sushi bite. Serve with chopsticks!

Super easy, right? And totally cute and fun. Older kids can even help make this. This is one way that they will not turn down sushi!

I used Sabra Roasted Red Pepper hummus

I also made some with hummus and romaine. Follow the same steps, only spread hummus onto the bread, then lay a strip on lettuce leaf of top of that, followed by a little more hummus to keep it altogether. Stick a strip of romaine lettuce into top for a little flair.



Lily wasn't sure what to make of these little nibbles when she first set eyes on them, but she managed to gobble them up anyway. When she's older she'll appreciate my efforts at being creative, I'm sure...

You can probably come up with some different "sushi"-fillings for this recipe. What do you think would work well?

Meatless Monday: Sugar-Free, Dairy-Free Truffles

Over the weekend I was craving something sweet after a rough couple of days with Lily. As I said on Friday's post, she was feeling sick and we were also in the midst of potty training; between those things, she was just being a handful in general, and mommy was burnt out by the time she finally got to sleep on Friday.

I didn't want anything too sugary because my teeth have been bothering me (plus it's obviously healthier to lay-off the extra sugar!), and I didn't want anything too heavy, like ice cream. Then, I came across this recipe while I was browsing recipe blogs and inspiration struck! I recently finally bought a food processor, and I had many of the ingredients to make these tasty treats, but I changed it up enough to make it my own, and I made 2 different versions...


Sugar-Free, Dairy-Free Truffles
(each recipe makes about 12 truffles)

Cashew and Date Delights

1/2 cup raw cashews (helps if they've been soaked in water for a few hours)
1/2 cup cocoa powder
1 tbsp coconut oil
2 tbsp honey or agave syrup
7 pitted dates

1-2 tbsp shredded coconut (unsweetened)

Process the cashews in food processor until chopped to a mostly fine, crumble (or to your liking). Add the rest of the ingredients and process 5 seconds at a time until all is mashed together and somewhat sticky. If it's too dry looking, add some more coconut oil or water, and if it's too wet, add more cocoa powder. 

Remove the blade, then roll chunks of the sticky brown mess into little balls like in the picture below. Next, roll into shredded coconut. They can be served right away or refrigerated to keep. 




Peanutty Balls

1/2 cup raw peanuts (also helps if they've soaked)
1/2 cup cocoa powder
2 tbsp peanut butter
2-3 tbsp honey
5 dates
1 graham cracker

Process the graham cracker into fine crumble and set aside. Process the peanuts in food processor until chopped to a mostly fine, crumble (or to your liking). Add the rest of the ingredients and process 5 seconds at a time until all is mashed together and somewhat sticky. If it's too dry looking, add some water, if it's too wet, add more cocoa powder. Add more honey if desired, to taste.

Remove the blade, then roll chunks of the sticky brown mess into little balls. Next, roll the balls into the graham cracker crumbs. They can be served right away or refrigerated to keep. 

I personally liked the Date Delights better, but I was then craving peanut butter on Saturday and decided to change it up. There are so many possibilities, actually. Here are some other ingredient suggestions:
  • almonds
  • dried cranberries
  • raisins
  • cashew and/or almond butter
  • dried cherries
  • espresso beans
  • hazelnuts
  • macadamias
  • cacao
So many possibilities for such a quick and easy treat! And best of all, a treat you don't have to feel guilty about eating! Lily took a bite and right away said, "Mmmm", followed by, "I want more". Paul was impressed as well, but still prefers the classic sugary sweets (he's not the best role model in those respects). I'm hoping to perfect these even more so that he will enjoy them over traditional cookies and pastries.

Or you could enjoy them without any coating...along with a glass of pinot noir :)

Adding nuts to your diet is a good way to keep your heart healthy and cholesterol levels low. This is pretty common knowledge, but did you know that using dates as a replacer for sugar can also be beneficial in ways other than keeping refined sugars out of your diet? They are full of fiber, antioxidants, and vitamins and minerals such as B vitamins, potassium and copper. Do keep in mind that they are still high in sugar and carbs, so eat sparingly! It's just good to know that they are better for you than straight up sugar!
