Meatless Monday: Spaghetti Pizza Pie

I made spaghetti a few days ago, and we ended up having a lot of leftovers because a friend of mine who I thought was going to join us didn't end up making it. And it just sat in my fridge for a couple days, like leftover pasta tends to do- it's just never the same when you have to reheat it. Thinking it may have to get tossed out once I finally remembered it was there, I then recalled my desire to want to make spaghetti pie. Paul's mom makes one that is very simple and chilled that he really enjoys, but I was in the mood for something more hearty, and I came up with this one that is sort of like a spaghetti pizza...



Spaghetti Pizza Pie
(serves 4-6)

Ingredients

Approximately 8 oz cooked spaghetti
2 eggs
1 cup grated Parmessan and/or Romano cheese
1 cup shredded or sliced mozzarella
1 cup tomato sauce
1 tsp oregano + extra
1 tsp basil + extra

Preheat the oven to 350 degrees. Beat the eggs and stir in the grated cheese, basil, and oregano in a large bowl. Add the cooked spaghetti and mix with egg mixture until well combined. Press pasta mixture into a 9" pie pan as you would a pie crust, leaving a slight indentation in the middle. Pour the tomato sauce on to the indent in the spaghetti "crust", then top with the mozzarella cheese and extra seasonings (if desired), like in the picture below. Bake for about 20 minutes, or until cheese is all melted and a little brown on top. Allow to cool for at least 5 minutes before serving. We enjoyed it with a nice green salad. 




So simple and so good; this really hit the spot! I can't wait to make it again and get even more creative by adding other toppings like fresh tomato, spinach, and peppers. You can even add pepperoni or sausage on a non-meatless day ;) Paul liked this version, too, but said he still prefers Mom's. Oh, well, I did my best! I like tomato sauce on my pasta, what can I say?

Using whole wheat pasta can provide you with a large serving of fiber, beneficial nutrients and minerals, and reduce your risk for heart disease. I tried Ronzoni Smart Taste® spaghetti for this recipe instead of whole wheat. It is white pasta that is enriched with fiber and calcium. It definitely didn't taste like whole wheat, but I don't know if its health benefits really match using regular whole grain. Sometimes you just prefer the taste of white pasta for certain recipes, but I think either kind could work for this one.

Product Review: EnviroKidz Organic Leapin' Lemurs Cereal

It's been a while since I've done a product review. I don't write them often; a product really has to impress me to get me to blog about it. 

Like most kids, Lily loves her cereal. At least once a day, whether it's breakfast time or not, she's looks at me and says, "Cereal, Mommy". She gets it from her daddy, I think- Paul likes to have it for a snack, too.

It's hard to find a good cereal that is healthy and fun that's not covered in sugar. Not that Lily needs to eat a sweet cereal; in fact, she is happy with shredded wheat and bran flakes. Yet, when I saw this adorable cereal box in the "Natural Foods" aisle at Stop & Shop, we just had to give it a try.


How cute are those lemurs? The cereal is peanut butter & chocolate flavored, and made from organic ingredients such as corn meal, molasses, soy oil, and of course peanut butter and cocoa. It's gluten-free and low in sodium, and also boasts packaging made from 100% recycled paperboard. On one of the side panels, it gives examples of why it's good to eat eat organic, which can be helpful for older kids who are already reading when they're sitting at the table like this:


The box also has information about lemurs on the back. Kids can learn about where lemurs live, how they are becoming endangered, and a non-profit group that helps to protect them. This is definitely better reading than the hyped-up cartoons and games they put on most kids' cereal boxes. 


Now, I'm sure you've heard enough about the packaging- how's the cereal??? Well, Lily always asks for seconds, and then even thirds! It does taste pretty good, sort of like a Reese's Cup without being too sweet. A very nice balance with the almond milk. The cereal is little balls with a nice crispy, crunch texture. I say it's a hit!

Pork-free Andouille Sausage and Cauliflower Skillet + Aidells Sausage Review

I had a head of cauliflower and wanted something to do with it. Something new, yet simple too. I came across this easy recipe that looked like it would hit the spot, and it sure did. But, I wanted to beef it up a bit, and then I remembered the pack of Chef Bruce Aidells® Cajun Style Andouille sausage I had just bought. The combination came out even better than expected...


Andouille Sausage and Cauliflower Skillet
(serves 4-6)

Ingredients:

1 head of cauliflower, chopped into florets
3-4 cloves garlic, minced
2 tablespoons of olive oil
1 small bunch of chives, chopped

1/2 tsp sea salt
Juice and zest of one lemon

1 12 oz package Chef Bruce Aidells® Cajun Style Andouille sausage (or something similar)
Salt and pepper to taste

Heat the olive oil and sea salt in a skillet over medium-low heat. Stir in the cauliflower and fry until partially browned, like in the pic below. Flip florets around as needed. Add the garlic and sausage and cook for another 3-5 minutes, stirring occasionally. Stir in the garlic in the last 30 seconds then remove from heat. Stir in the lemon juice, zest, and chives, then serve.

The delicate flavors of the cauliflower with lemon combined with the spicy sausage is an interesting balance. It tasted even better as leftovers for breakfast the next day, which I served with 2 fried eggs and some extra chives on top. 

Paul liked this one, too, and Lily liked the cauliflower, although the sausage was too hot and spicy for her. Beware of that fact if you are serving this to little ones who are sensitive to spicy foods! You can substitute with a less spicy sausage then, or omit completely for a more overall family-friendly meal. Paul just suggested using hot dogs instead...you know I wouldn't recommend that, but to each their own! There are other flavor options from Aidells brand, or you could use something else entirely.

The cauliflower on it's own is fine for babies 6 months and older. Kids should like the cauliflower fine on its own if they don't like the andouille, but if they remain picky, my magic trick is adding some grated Parmesan!

As for this brand of sausage, I was happy with it. I picked it up because there was a sample lady singing its praises at Stop and Shop the other day, so I gave what she was offering a try. The first kind she gave me was a sample of Aidells® Roasted Garlic & Gruyere, which I thought I would love, but something about it didn't quite grab me. I think it was a little too heavy on the gruyere or something...I know- how can that be?!

    
So then she gave me a few other choices and my ears perked up when I heard andouille, since all of Aidells® products are made with poultry, and not pork. I eat andouille on occasion (like when dining out or when I know it's from a humanely raised animal), and I must say it is my favorite sausage. I hadn't found a pork-free version until this day at Stop and Shop. I tried a mini version of the Cajun Style Andouille and liked it enough to buy a pack. The happy sample lady gave me a $1 off coupon and a little booklet with more product info and more coupons. 

I imagined lots of fun ways to use this sausage: serving them up as hors d'oeuvres at a BBQ or other gathering wrapped up with asparagus spears in smoked cheddar cheese, slicing them up with scrambled eggs (which I did and that was good too!), concocting some fun skillet (Which I also did! See pic below). This is a very tasty and versatile sausage- hot and spicy, yes, but I found it to be just the right amount of hotness. It won't send you running for the water after you eat a plateful, but you may need a cold drink after the initial shock of the first bite. 

  
Overall, this is a good product and I recommend it. I also like that on the website it says that Chef Bruce Aidell uses only "humanely raised poultry". I don't know the full extent of that as it doesn't go into details about the farming practices, but I will do some digging. Aidells® does make organic products, too, and the site also says they support non-profits, but there isn't much detail about that either. Take a look at their site for more information.

Product Review: Little Mermaid Royal Bath Time Doll

I don't normally do product reviews on toys, but since Lily just loves this doll so much, and since there are other little girls who I'm sure enjoy The Little Mermaid as well, I figured I should inform parents a bit about this doll before they decide to buy it.

First of all, I just found out it is now discontinued, so you may only find it on sale at stores that have a few left, or on Ebay. I got it at Toys R Us for super cheap, a) because it was on sale for $9.99, and b) because I had a gift card with $6 left on it. Lily recently got introduced to Disney's The Little Mermaid after I borrowed the DVD from my sister and I allowed Lily to watch it on a rainy day. She was instantly in love, and decided to I picked her up the doll since she also could use a new bath toy. I have already illustrated in a past post how much she likes this doll.

The doll itself is just as well made as any other Mattel toy, no complaints there. The water drains out of it very well too. She has cute sparkles on her eyelids and bathing suit that Lily insists looks like a bow. I try to avoid buying too many plastic toys, but like I said, I had a gift card, Lily needed a new bath toy, and she is really into what she affectionately calls "Mermaid". All in all, it's a very nice doll and Lily loves it, so that makes me happy.

The one thing I don't like about it is the "washable" crayon it comes with. It comes with an extra soft, retractable green crayon that sort of looks like a little wand or scepter. The issue I have with it is it's not the most washable crayon. It comes off okay with some soap, but not really on Ariel's face. I really have to scrub the face to get it off. AND, Lily likes to color on the tile and walls of the tub with the crayon too; it comes off easily enough with just some water and rubbing, but it also leaves a yucky green ring around the tub once it's drained! Mommy was not pleased by this. I took a picture of this, but it didn't come out very well, so just trust me on it.




Furthermore, it takes a bit of scrubbing to remove the crayon from skin. You'd think that would be the least permanent seeing how it's obvious the kid is going to want to color on herself. But, no. Lily hates it when it comes time to clean it off of her, so I greatly discouraged her using her own body as a canvas, and she has seemed to learn not to after quite a few scrubbing sessions.

To my relief, Lily broke the crayon a few days ago after having bought the doll a couple weeks before that, so I got to throw it away. She doesn't seem to miss it which is good, and is totally happy playing with just Ariel. In fact, she is getting into the habit of taking Ariel with her everywhere- on car rides, to the dinner table, in the pool, on walks, to bed, even on chariot rides...


So, if you have a little sweetie who is a Little Mermaid or Disney Princess fan, I'd say the doll overall is good, but just keep the crayon away from her unless you want a rainbow ring around your tub that tales a lot of scrubbing to remove!

Sweet Saturday #7: Sweet Product Review!

It’s been a busy week, and it looks like things will just be getting busier and busier for me. My new job is starting to really pick up, and by mid summer I expect us to be in full swing! I will keep you posted on this exciting new venture of mine as details develop. For now, we are in such “baby steps” mode that I feel I should keep mum on the word.

SO, finding time for trying fun new recipes has been hard. But, finding time to try fun new things hasn’t!

The Ben & Jerry’s Ice Cream is on sale at Shop Rite by us this week, so I picked up a couple of flavors since our ice cream maker broke (that was the main way we’d been enjoying ice cream for the past 2 years). I got Irish Mudslide which was good, but I also got a flavor of their new Greek Frozen Yogurt line- Banana Peanut Butter. And that was really good!  I didn’t really know what to expect, but you know Ben & Jerry’s rarely disappoints. It’s banana flavored Greek style frozen yogurt with swirls of rich peanut butter. Yummmmmyyyy. Add some hot fudge and fresh strawberries and you might think you’re eating a banana split!


It also has less fat than most B&J’s flavors (8 g per ¼ cup serving), but still has a lot of sugar per serving, at 26 g. One of the things I like most about B&J’s ice cream is that they have a dedicated pledge to not use milk from cows treated with rBGH. That makes me happy. It would make me even happier if thy also pledged to use organic and no corn syrup, but it’s still a step in the right direction. They are also very socially active regarding the green movement, Fair Trade, and even Occupy Wall Street.

You may not know this, but Greek style yogurt is considered to be even better for you than regular yogurt. It contains twice as much protein, has less sodium, is lower in carbs, and easier on the stomach digestion-wise. Greek yogurt is thicker and creamier than regular yogurt because the extra whey and water is removed, thus also making you feel fuller after eating it. Next time you see Ben & Jerry’s Greek Frozen Yogurt at the supermarket, don’t be afraid to give it a try! There are a lot of good flavors out!

Product Review: BabyGanics Lavender Bubble Bath and Foaming Shampoo & Body Wash





I hope everyone had a lovely Mother's Day. I had intended to do an awesome Mother's Day post, but guess what- I was sick. On Mother's Day. Yes. sigh. My hubby did the best to make it count anyway. I was surprised by a bouquet of flowers on the dining room table, and then he took me to get the hammock I was longing for, only for me to pick out a new lounge chair instead. Then we had Mexican take-out for dinner...plus a mucho necesito Margarita at the bar. So, it was a lot better than it could've been, despite my crankiness from feeling like poop. It was such a nice day out too. I'm feeling much better now, just a little achy and congested. 

Since I didn't focus much on cooking anything new and spectacular, I am presenting you with another product review. I finally decided to try BabyGanics® body products, which have been highly recommended to me by several people and have gotten low toxicity ratings on EWG's Skin Deep websiteThey happened to be on sale one day when I was at Babies R Us and in the market for a restock on body products for Lily, so I picked up two bodywashes (one in lavender and one unscented), one bubble bath, one bug spray and one sunscreen.

The first thing we tried was the lavender Soothing Bubble Bath & Body Wash. It smelled really nice, very subtle and soothing, just as the product described. It made a decent amount of bubbles (not as bubbly as these!), but I had to use more than two squirts as recommended. I had to use about five squirts, and our tub is a pretty standard sized tub. We also went through them pretty quickly, which was disappointing. Additionally, I also liked that Lily didn't have a residue feeling on her skin after she rinsed off, as some bubble baths tend to leave. Her skin was silky soft and scented with the delicate perfume of lavender...mmm...

Please don't judge the filthy tiles. I'll get to it, I swear.

The lavender Soothing Foaming Shampoo & Bodywash is wonderful, though! Five stars for sure! It smells AMAZING and a little bit goes a LONG way. I thought the applicator was kind of weird at first, but now I see that it's good at keeping water out and balancing the bottle upright. If your kid is like mine, they tend to drop their bodywashes in the water and then the water gets inside the bottle, making it watery too. It also suds up very nicely from plant-based sources rather than sulfates.

  • no synthetics
  • no phthalates
  • no mineral oil
  • petroleum-free

The one thing I found misleading about this product is the fact that it's called "BabyGanics", which to me implies that the product is organic. No where on the ingredients is anything labeled as organic. I visited their website and no where there does it say anything about being organic either. Maybe it's just me, but I truly thought that the name implied their product being organic, but apparently not. No biggie, but I wonder if that has been a peeve with anyone else. 

I haven't tried the bug spray yet, and have only used the sunscreen a few times so far, so I will let you all know how that goes later (so far so good! It's also award-winning according to website)

Meatless Monday Product Review: Gardein Chipotle Lime Crispy Fingers

This will mark my third product review. I didn't expect to write one so soon, but I felt compelled to after taking a chance on a new "meat substitute" product, something I didn't think I'd do ever again. Plus, it's Meatless Monday afterall...

Judging by the package, Gardein's Chipotle Lime Crispy Fingers look pretty darn tasty. Anything Chipotle is bound to catch my eye, so I decided to give them a try. On the package they really look like chicken fingers too! 


Now, as some of my readers who've been following my blog since the beginning may recall, I used to be a committed vegetarian. While I was a vegetarian, I was never too into meat substitute products that were made to taste like meat. I just never understood the point- I was vegetarian because I didn't want to eat meat, and I was not interested in eating fake meat either. Sure, I liked veggie burgers because they tasted like what they were called, but that was about it. I did try some "Tofurkey"-type stuff (is that what it's called?) and even vegan cheese, but it just was never the same, and usually tasted like plastic.

Gardein's Crispy Fingers are not the exception. They may not taste like plastic, but they do not taste very good either. The seasoning was pretty good and they were nice and crispy, and the texture of the soy protein and gluten combination did somewhat resemble meat, but I didn't care about it resembling meat as I have already stated. I was expecting hoping it would look more like the texture of classic tofu, but it looked like it had been specifically molded to look like chicken strips. The smell of them baking even fooled my dog, and he sat right by my chair begging for a bite with his puppy eyes while I ate them in a wrap.

Besides soy protein and gluten, the ingredients of the strips include "ancient grain flour", which also intrigued me. The "ancient grain flour" contains kamut®, amaranth, millet and quinoa. This awesome combination of grains did not save this product, although I do wish I could obtain this "ancient grain flour" on it's own. I can make it if I really want to, I suppose. The strips also contain an array of seasonings such as cilantro, chipotle pepper and lemon peel. Nothing too fancy, but it all still sounded very promising.


Here is what I prepared:



Ingredients
(makes 1 serving) 

3 Gardein Chipotle Lime Crispy Fingers™
1 whole grain wrap
2 full leaves of romaine
1/2 cup of red and green bell pepper strips
2 tbsp tahini dressing (recipe below)
1 tbsp fresh cilantro
1 tsp lime juice

Tahini Dressing

1 tbsp sesame tahini paste
1 tbsp water
1 tsp lemon juice
1/4 tsp salt

Bake the strips in oven according to package instructions. While they're baking, mix the dressing ingredients together in a separate bowl, adding more water or sesame tahini paste as needed (I use Joyva brand sesame tahini). Optionally, you could also add some minced garlic to it. Have wrap ready to go by layering ingredients onto the wrap as desired. I put down the romaine, then the peppers, then the cilantro, then the lime and tahini dressing. When the crispy fingers are done, allow them to cool for a few minutes before placing onto wrap. I put extra tahini on it since I did not like the taste so much.

Now, you may be wondering- why bother providing a recipe if I gave this product a poor review? Well, I figure you may not want to take my word for it and try them for yourself. Let me know if you do and if you happen to come across a different flavor or product that you think is actually better.

Product Review: Grain Berry Bran Flakes

This is only my second product review, but I was recently introduced to this cereal and I really like it- enough to want to tell you about it!

I'd actually seen it in the cereal aisle a couple of times before Paul decided to go and buy it for us because he found it on sale one week. I was afraid it might taste like cardboard like so many other bran flakes tend to, but these are actually quite flavorful in a rich and hearty sort of way. They even have a delicate sweetness and just enough crunch.

The box boasts that it is full of antioxidants, having "oz. for oz. more antioxidants than blueberries, pomegranate juice, or red wine." As most of us know, antioxidants are very beneficial in a number of ways, including keeping the heart healthy, fighting cancer-causing free radicals and supporting the immune system. What makes this cereal particularly different from other bran flakes is that the flakes are made from grain berries, a plant which contains all the extra antioxidizing benefits. The ultimate taste-test came when I offered Lily a bite. She didn't seem to be too thrilled at first, but then asked for seconds! She especially liked them when I added fresh berries to the mix. We enjoyed them with my favorite new milk, Blue Diamond Almond-Coconut Milk® (another review I should do!). 




Since getting hooked on the Bran Flakes, we have also enjoyed the Grain Berry Toasted Oats® and Honey Nut® , respectively.

Product Review: Clearly Natural Happy Kidz Bubble Bath


I had quite the weekend a few days ago, so I do apologize for not posting a Meatless Monday recipe blog hop. I had a lot going on and simply did not find the time to write anything, so Meatless Monday will return next week. Sorry! Anyway, I know no one will hold it against me, and I promise next week’s post is worth the wait.

So I wasn’t sure what to write about this week and a lot has been on my mind and “to do” list with work, Lily’s birthday party approaching, family matters, and life in general. Then my husband suggested I do a product review on this new bubble bath I recently got for Lily. You see, he’s been hopping around the mommy blogs too to see what all the fuss is about, and he happened to notice that quite a few of you like to do those sort of things. Then I figured, “Well, I do like this bubble bath and so does Lily”, so I gave in, even though I had never wanted this blog to be about that.

But, this is a really great all natural bubble bath that smells AMAZING and I decided that it ties in to health since it is a body product that’s all-natural and eco-friendly, making it even better for your little one’s skin. So, perhaps I can work product reviews into my blog after all…




Clearly Natural Essentials Happy Kidz Bubble Bath is an all-natural glycerine bath soap. It contains natural fragrance derived from orange, vanilla and clove essential oils. The fragrance is by far my favorite part, but the fact that it doesn’t contain any harsh chemicals or artificial anything is great too. Lily likes it because it’s so bubbly. Just look at the pic below!

It is also sodium lauryl-free, sodium laureth sulfate-free, made from vegetable ingredients, hypo-allergenic, biodegradable, and cruelty-free! These are all the things that I look for when purchasing body products, especially ones I use on Lily. It also has a really cute picture on the front of a dolphin and fish that Lily likes too :)

Yay for bath blocks!

Lily’s skin is nice and soft and not soapy-feeling after she bathes in it, and it doesn’t irritate her eyes. It comes in a good size bottle and a little bit goes a long way! I would definitely recommend this product that I got on vitacost.com which is my favorite place to find all-natural products for the best price.  I was not paid or asked to write this review, I did it by my own accord, but I will let the company know so that they might send me some more bath bubbles or coupons!!!
